Our lone nay vote was Wes. You think you know someone for 10 years and you know everything about them, but you really don't! I found out last night that he doesn't really like stuffing...of any kind! Wow! I had no idea. He still liked the chicken, he just wasn't it's biggest fan.
The recipe ended up being pretty simple. I changed it to my tastes and what I had in my pantry though. I took some frozen spinach and cooked it for about 3 minutes, then I pulsed it in the food processor. In the same pan that I cooked the spinach, I sauteed some garlic until it was fragrant and threw that into the mix. Make sure that you taste the filling before stuffing the chicken because mine was in need of some salt and pepper.
